Life Changing Omelette

This is a life changing omelette. You may think I'm exaggerating but I am not. This omelette will change your life, if you let it. Whilst preparing it in front of a couple of Italians, they bowed their heads in shame, saying "we are so humiliated". This omelette is spectacular. So spectacular it will make an Italian blush for not having made it themselves. If you ever need to embarrass an Italian, this is how.

Plus it is incredibly easy to make and can easily be taken around with you, pretty much wherever you go. I've eaten slices of this omelette on trains and on the sides of mountains - this last one not really, but I would. I am eating a slice right now!

The ingredients can be changed according to taste but the basic point is to incorporate lots of amazing vegetables. This one has mineral rich ocean vegetables in it. In this way the omelette becomes an energy-giving breakfast or an on-the-go lunch, full of vitamins and protein. It can be eaten hot or cold, any which way. I added bacon to this recipe but it's optional.
If you are not yet sold on this recipe I don't know what else I can say to you. If you are convinced, read on. Note - you can vary the amounts here according to your needs. This particular recipe is for a large omelette that makes quite a few big slices:

Ingredients

(all organic and locally sourced if possible)
handful of asparagus
handful of broccoli
small sheet of kombu (ocean vegetable) - soak this for half an hour beforehand
half an onion
knob of butter
6 eggs
1 rasher of bacon chopped into small pieces

Put the pan on the hob with the butter, medium heat. Chop the onions finely then saute them until translucent. Add the bacon at this point if you choose to include it. Meanwhile chop all the vegetables and then add them to the pan. Toss them about in the butter and let them cook for about 5 or 10 minutes, until softened but not overcooked. Crack the eggs into a cup and attack with a fork until completely whisked.

Then pour the eggs over the vegetables and let it all settle down in the pan. Leave to cook until the underside is lightly browned. This can take about 10 minutes. Meanwhile turn the grill onto a fairly high setting and once ready put the pan straight under the grill. Keep an eye on it until golden brown, then take it out and there you have it - a truly life changing omelette!
